Pick them when they are yellow and still firm. Leaving them on the vine to long and they get mushy.

When to pick tomatos is largely personal preference. The longer they stay on the vine, the sweeter they taste. You can pick them green, after you can see a yellow-green “star” on the bottom of the tomato, and they will ripen and turn color after you pick them and put them on the kitchen counter for a few days. Pay attention to the color and how firm the tomatos feel when you pick you first ones. Then see how they taste. You will quickly decide what is the best time to pick them to suit you.
